So you purchased mushrooms, now what? Here are some tricks to prepare mushrooms so they can accompany any delicious dish. ​
Thicker is at times Better
Mushrooms that have been thinly sliced are excellent as a pizza topping, but you shouldn't cook them so thinly. Cut them to at least a thickness of 1/2 inch when using them for baking, sauces, soups, and stews. Thicker chunks help counteract mushroom shrinkage while cooking and provide body and texture to your foods, Additionally, oyster mushrooms taste better ripped rather than cut, while smaller mushrooms can even be cooked whole.
Salt At the Right Time
Adding salt either before or right away after adding mushrooms to a skillet will cause the mushrooms to release water and simmer in their own liquids. This may produce stiff, rubbery, and flavorless mushrooms. Adding salt once they've caramelized toward the end of cooking to give them the flavor and consistency you desire.
How hot is to hot?
Avoid overheating or undercooking the mushrooms by using an appropriate heat level. The ideal temperature for cooking mushrooms is medium-high. Their liquids should gradually evaporate as they caramelize. While moderate heat can cause mushrooms to cook in their own liquid, high heat can burn mushrooms.
You should also pay attention to the pan. For mushrooms, use a cast-iron skillet or another robust pan that can withstand high heat. Using a thicker pan will help you prevent burning or undercooking the mushrooms because they require time and a lot of heat to cook correctly. A thinner pan may not heat evenly or predictably.
Don't oil in the beginning
Mushrooms soak up everything, so they often require no oil at the start. Get your pan nice and hot, then put in the mushrooms. After a few minutes, your pan will likely be filled with mushroom juice. Keep cooking the mushrooms through until all the juice is evaporated. By this point add some oil will and you will be caramelizing the mushrooms, this is the part that builds flavor. At this point add garlic and onion.If you're fancy, finish with a little butter and a sprig of herbs for the last minute of cooking.
How long do you cook mushrooms?
Since mushrooms contain a great deal of moisture, cooking them releases their true flavor. Be careful not to overcook them, but allow them to cook for long enough for all of their juice to be released. When they stop emitting fluids, it will be quite clear. And if you cook them for a few more minutes after that, you'll get some great caramelization.
